  • 1 cup rice (white or brown)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped green onions (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced Cajun sausage and cook until browned, letting its delicious juices release.
  3. Stir in the onion, bell pepper, and garlic, cooking until softened to build a flavorful base.
  4. Add the rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper, mixing everything well.
