A delightful twist on the classic strawberry shortcake, these Strawberry Crumble Buttery Bars are a celebration of summer’s bounty, featuring gooey strawberries under a buttery, crumbly topping.

  • 2 cups fresh strawberries, chopped
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish, ensuring it’s ready to hold the fruity goodness we’re about to create.
  2. Combine the flour, oats, brown sugar, baking powder, and salt in a mixing bowl.
  3. Stir in the melted butter and vanilla until the mixture is crumbly.
  4. Press half of the crumble mixture firmly into the bottom of the prepared baking dish.
  5. Layer the chopped strawberries evenly on top of the pressed mixture.
  6. Sprinkle the remaining crumble mixture over the strawberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before cutting into bars and serving.

Notes

Serve warm or at room temperature, possibly with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week.
