A comforting, spicy meal featuring tender buffalo chicken and roasted sweet potatoes, all cooked on a single sheet pan.

Ingredients

  • 4 Chicken breasts
  • 2 Sweet potatoes, cubed
  • 1/2 cup Buffalo sauce
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • Toppings (e.g., avocado, green onions, cilantro)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut sweet potatoes into bite-sized cubes and toss them with olive oil, salt, pepper, garlic powder, and onion powder.
  3. Spread the seasoned sweet potatoes on a sheet pan in a single layer.
  4. Slide the sheet pan into the oven and bake for 20 minutes.
  5. While the sweet potatoes are baking, season chicken breasts with salt, pepper, and garlic powder, then toss in buffalo sauce.
  6. After 20 minutes, add the seasoned buffalo chicken to the pan with sweet potatoes.
  7. Return the sheet pan to the oven and bake for an additional 20-25 minutes until chicken is cooked through.
  8. Once cooked, remove the pan from the oven and let it cool slightly.
  9. Serve by scooping portions into bowls and add your favorite toppings.

Notes

You can substitute chicken with roasted chickpeas or tofu for a vegetarian option.
