  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 4 strips of bacon
  • Maple syrup for serving

Instructions

  1. Whisk the dry ingredients in a large bowl until well combined.
  2. Combine the wet ingredients in a separate bowl until smooth.
  3. Mix the wet ingredients into the dry ingredients until just combined, leaving some lumps.
  4. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  5. Pour about ¼ cup of batter for each pancake in the same skillet; cook until bubbles form, then flip.
  6. Stack the pancakes on a plate, crumble bacon on top, and drizzle with warm maple syrup.

Notes

For extra fluffy pancakes, let the batter rest for 10 minutes before cooking. Storage: Leftover pancakes can be stored in an airtight container in the fridge for up to 3 days.
