  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 1/3 cup confectioners’ sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Cream together the softened butter and sugar until fluffy. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the milk and vanilla extract until smooth.
  4. Combine the flour, baking powder, and salt in a separate bowl. Gradually add this mixture to the wet ingredients and mix until just combined.
  5. Fill the cupcake liners about 2/3 full and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Whip the heavy cream until stiff peaks form, then fold in the confectioners’ sugar gently. Cut a small hole in the center of each cupcake and fill with the whipped cream.
  7. Make the chocolate ganache by melting the chocolate chips and drizzling it over the filled cupcakes.
