A comforting and flavorful soup featuring fresh bok choy, garlic, and ginger, perfect for chilly days.

Ingredients

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups vegetable broth
  • 2 bunches baby bok choy, halved
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste
  • Pepper to taste
  • Optional: ½ teaspoon chili flakes for garnish

Instructions

  1. Heat the vegetable oil in a medium pot over medium heat.
  2. Add the minced garlic and grated ginger and sauté for 1–2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a gentle boil.
  4. Add the halved bok choy, reduce the heat to low, and simmer for 5–7 minutes until the leaves are tender.
  5. Stir in the soy sauce and sesame oil, then season with salt and pepper to taste.
  6. Ladle the soup into bowls and sprinkle with chili flakes if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth or water if needed.
