  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Incorporate the eggs, one at a time, until fully blended.
  5. Add the milk and vanilla extract and stir to combine.
  6. Combine the flour mixture and wet ingredients, mixing until just combined.
  7. Prepare the cream cheese by mashing it in a small bowl until smooth.
  8. Fold the cream cheese and fresh blueberries into the batter.
  9. Transfer the batter into the prepared loaf pan and spread evenly.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
