Delightful and sweet blueberry quesadillas, perfect for breakfast any day of the week.

Ingredients

  • 4 tortillas
  • 1 cup cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon butter for frying
  • Powdered sugar for serving (optional)

Instructions

  1. Mix the softened cream cheese, sugar, and vanilla extract until smooth.
  2. Spread a layer of the cream cheese mixture on half of each tortilla.
  3. Top with fresh blueberries.
  4. Fold the tortillas in half over the filling.
  5. Heat butter in a skillet over medium heat.
  6. Cook the quesadillas for about 2-3 minutes on each side, until golden brown.
  7. Serve warm, dusted with powdered sugar if desired.

Notes

These quesadillas can be paired with fresh fruit or Greek yogurt. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
