Delicious blueberry bread combining the sweetness of ripe berries with a buttery base, perfect for breakfast or as a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with cooking spray or butter.
  3. Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
  4. Beat the softened butter and sugar together until light and fluffy.
  5. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Mix in the milk gradually until combined.
  7. Fold the dry ingredients into the wet mixture until just combined.
  8. Gently fold in the blueberries until evenly distributed.
  9. Transfer the batter into the prepared loaf pan and smooth out the top.
  10. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best texture, ensure butter is softened but not melted. If using frozen blueberries, don’t thaw them.
