A warm and comforting slow-cooked chicken dish with a sweet and tangy Hawaiian-inspired sauce.

  • 2 pounds chicken breast
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place the chicken breasts into the bottom of your crockpot.
  2. Distribute the pineapple chunks evenly over the chicken.
  3. Whisk together the soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes in a separate bowl.
  4. Pour the prepared sauce mixture over the chicken and pineapple.
  5. Cover and cook on low for 4 to 6 hours until the chicken is tender.
  6. Carefully shred the cooked chicken using two forks directly in the pot.
  7. Whisk cornstarch and water together; stir this slurry into the crockpot liquid and cook on high for 10 to 15 minutes to thicken.
  8. Return the shredded chicken to the sauce, stir well, and serve warm.

Notes

For the best texture, use fresh boneless chicken breasts. Leftovers can be stored for up to 4 days in the fridge or frozen for up to 3 months.
