  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup fresh blueberries
  • 1/4 cup brown sugar (for crumb topping)
  • 1/4 cup flour (for crumb topping)
  • 1/4 teaspoon cinnamon (for crumb topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, sugar, baking powder, and salt in a large bowl.
  3. Mix the melted butter, egg, vanilla extract, and milk in another bowl until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the fresh blueberries gently.
  6. Combine the brown sugar, flour, and cinnamon in a separate bowl for the crumb topping.
  7. Sprinkle the crumb topping over the muffin batter in the tin.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the muffins cool slightly before serving.

Notes

To prevent blueberries from sinking, dust them with a little flour before folding into the batter.
