A comforting beef stew that warms the heart, filled with tender meat and hearty vegetables.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Sear the beef in a large pot with olive oil over medium heat until browned. Set aside.
  2. Sauté the onions and garlic in the same pot until softened, about 3-5 minutes.
  3. Mix in the tomato paste and stir for 1 minute.
  4. Combine the seared beef, beef broth, thyme, salt, and pepper in the pot. Bring to a boil.
  5. Simmer for 1 hour, allowing the beef to become tender.
  6. Add the carrots and potatoes, cover, and cook for an additional 40 minutes.
  7. Adjust seasoning as desired and serve warm.
