Ingredients

  • 1 cup brown rice
  • 2 cups broccoli florets
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add chopped onions and minced garlic, and sauté until onions are translucent.
  3. Brown the ground beef in the skillet until browned.
  4. Stir in the diced bell pepper and cook for an additional 3-4 minutes.
  5. Add soy sauce, salt, and pepper; mix well.
  6. Cook brown rice according to package instructions in a separate pot.
  7. Steam the broccoli florets until tender.
  8. Divide rice, beef mixture, and broccoli into meal prep containers.
  9. Let cool before storing in the fridge for up to 5 days.
