A colorful and flavorful bowl of crispy salmon bites paired with fresh veggies and a tangy Bang Bang sauce.

  • 1 lb salmon fillet, skinless and boneless, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey
  • 2 cups cooked brown rice
  • 1 cup shredded cabbage
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds
  • Vegetable oil, for frying

Instructions

  1. Prepare the Breading Station by combining flour, salt, and pepper in a dish. Beat the eggs in another dish. Set up panko breadcrumbs in a third dish.
  2. Dredge each salmon cube in the flour mixture, dip in the beaten eggs, and then coat in panko breadcrumbs.
  3. Fry the salmon bites in hot oil until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
  4. Whisk the Bang Bang sauce in a bowl by combining mayonnaise, Sriracha, and honey.
  5. Assemble the bowls by dividing brown rice, adding vegetables, and topping with crispy salmon.
  6. Drizzle Bang Bang sauce over each bowl and garnish with green onions and sesame seeds.
  7. Serve immediately while hot and crispy.

Notes

For a spicier sauce, adjust the Sriracha to taste. Store leftovers separately in airtight containers and reheat in the oven to maintain crispiness.
