Soft and moist Banana Crumb Muffins with a delightful crumb topping that adds a crunchy texture to each bite.

Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup flour (for crumb topping)
  • 1/4 cup oats
  • 1 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas and melted butter in a mixing bowl.
  3. Mix in the baking soda and a pinch of salt.
  4. Stir in sugar, the beaten egg, and vanilla extract.
  5. Gradually add in the all-purpose flour, mixing until just combined.
  6. Create the crumb topping by mixing the brown sugar, flour, oats, cinnamon, and cubed cold butter until crumbly.
  7. Pour the muffin batter into the prepared muffin tin and sprinkle the crumb topping evenly over the batter.
  8. Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
