A creamy and tangy dish featuring roasted feta cheese, cherry tomatoes, and perfectly cooked pasta, perfect for a cozy meal.

Ingredients

  • 200g feta cheese
  • 400g pasta (such as penne or fusilli)
  • 500g cherry tomatoes
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the feta cheese in the center of a baking dish and surround it with cherry tomatoes.
  3. Season with olive oil, minced garlic, salt, and pepper.
  4. Bake in the oven for 25-30 minutes until the feta is soft and the tomatoes burst.
  5. Cook the pasta according to the package instructions until al dente.
  6. Prep by reserving a cup of pasta water before draining the rest.
  7. Mash the baked feta and tomatoes together to create a sauce.
  8. Toss the cooked pasta with the sauce, adding reserved pasta water to adjust consistency.
  9. Serve hot, garnished with fresh basil or parsley.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of water or olive oil.
