A simple yet satisfying breakfast dish featuring baked feta cheese, cherry tomatoes, and eggs that brings a taste of the Mediterranean to your kitchen.

Ingredients

  • 200g Feta cheese
  • 4 large Eggs
  • 1 cup Cherry tomatoes
  • A handful Fresh basil
  • 2 tablespoons Olive oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, add the cherry tomatoes and drizzle them with olive oil, salt, and pepper. Toss them lightly to coat.
  3. Place the feta cheese in the center of the skillet with the tomatoes surrounding it. Drizzle more olive oil over the feta.
  4. Bake for about 15 minutes, until the feta is golden and the tomatoes have softened.
  5. Remove the skillet from the oven and carefully crack the eggs over the feta and tomatoes.
  6. Return the skillet to the oven and bake until the eggs reach your desired doneness, usually around 5-7 minutes for runny yolks.
  7. Once baked, sprinkle with fresh basil and serve immediately.

Notes

This dish pairs beautifully with crusty bread or a light salad. Best enjoyed fresh, but leftovers can be stored for up to 2 days.
