A delightful brunch dish combining baked feta, cherry tomatoes, and eggs, creating a creamy and flavorful experience.

Ingredients

  • Feta cheese (about 200g)
  • 3 large Eggs
  • 1 cup Cherry tomatoes
  • Fresh basil leaves (a handful)
  • Olive oil (2 tablespoons)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the feta cheese in a skillet and drizzle with olive oil.
  3. Add cherry tomatoes around the feta.
  4. Bake for about 15 minutes until feta is golden and soft.
  5. Crack the eggs over the feta and tomatoes.
  6. Bake again for 5-7 minutes until eggs are set to your liking.
  7. Garnish with fresh basil, salt, and pepper before serving.

Notes

Serve with crusty bread or a fresh salad. Store leftovers in an airtight container for up to 2 days.
