A simple yet nourishing Baked Chicken Meal Prep that brings healthy balance to your weekly meals with juicy chicken, broccoli, and brown rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup brown rice
  • 1 teaspoon dried Italian herbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together your olive oil, garlic powder, paprika, salt, and pepper in a bowl.
  3. Coat the chicken breasts generously in the mixture.
  4. Place the chicken breasts on a baking sheet with broccoli florets around them.
  5. Bake everything in the preheated oven for about 25-30 minutes until the chicken is fully cooked.
  6. Cook the brown rice according to package instructions.
  7. Portion out your chicken, broccoli, and brown rice into meal prep containers.

Notes

This meal can easily be stored in the refrigerator for up to 4 days. For longer storage, freeze up to 3 months. Feel free to swap out the broccoli for other veggies.
