Delicious, healthy Baked Broccoli and Cheese Balls that are perfect for a snack or appetizer. These cheesy bites are crispy on the outside and gooey on the inside.

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onions
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Steam or boil the broccoli until tender, then chop finely.
  3. Combine chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, onions, eggs, salt, and pepper in a bowl.
  4. Form the mixture into small balls and place on a baking sheet lined with parchment paper.
  5. Lightly spray the balls with olive oil.
  6. Bake for about 15-20 minutes until golden brown and crisp.
  7. Cool slightly before serving.

Notes

Serve with a tangy dipping sauce like ranch or honey mustard. Store leftovers in an airtight container for up to 3 days, or freeze for later.
