  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 1 pound chicken breast, diced
  • 2 cups mixed vegetables (bell peppers, snap peas, carrots)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the curry paste in a large pot over medium heat until fragrant.
  2. Add the coconut milk and chicken broth, stirring to combine.
  3. Bring the mixture to a simmer.
