A comforting dish that combines savory pork with the natural sweetness of applesauce, perfect for cozy family gatherings.

Ingredients

  • 1.5 pound pork tenderloin
  • 1 cup applesauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 small onion, diced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels and season with salt and black pepper.
  3. Heat the olive oil in an ovenproof skillet over medium-high heat and sear the pork tenderloin on all sides.
  4. Reduce the heat to medium, add the diced onion and minced garlic, and sauté until translucent.
  5. Stir in the applesauce, Dijon mustard, and fresh thyme, scraping up any browned bits from the bottom of the pan.
  6. Return the seared pork to the skillet, spooning some of the sauce over the top.
  7. Transfer the skillet to the oven and roast until the pork reaches 145°F (63°C), about 20 to 25 minutes.
  8. Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
  9. Slice the pork, spooning extra sauce over the top, and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the cooked pork tenderloin wrapped tightly in plastic wrap for up to 3 months.
