  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup diced apples
  • 1/2 teaspoon cinnamon
  • 1/2 cup oats
  • 1/4 cup flour (for topping)
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Fold in the diced apples gently.
  7. Prepare the topping by combining oats, flour, and brown sugar with melted butter until crumbly.
  8. Fill the cupcake liners about 2/3 full and sprinkle the topping over each cupcake.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
