  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup coconut flakes
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and buttermilk.
  5. Combine the all-purpose flour, baking powder, baking soda, and salt in another bowl. Gradually add to the wet mixture.
  6. Fold in the white chocolate chips, coconut flakes, and chopped pecans.
  7. Divide the batter evenly among the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Cool the cakes in the pans for about 10 minutes before transferring to wire racks to cool completely.
