Ingredients

  • 2 slices of bread
  • 1 cup cooked chicken, shredded
  • 1 avocado, mashed
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Lettuce leaves
  • Tomato slices
  • Red onion slices

Instructions

  1. In a bowl, combine shredded chicken, mashed avocado, mayonnaise, lime juice, salt, and pepper. Mix well until creamy.
  2. If desired, toast the bread slices until golden brown.
  3. Spread the chicken and avocado mixture on one slice of toasted bread.
  4. Layer with lettuce leaves, tomato slices, and red onion.
  5. Top with the second slice of bread and press gently.
  6. Cut the sandwich in half and serve immediately.

Notes

Store leftover chicken and avocado mixture in an airtight container in the fridge for up to 2 days. Add lime juice to prevent browning.
