  • 1 loaf of thick bread (like challah or brioche)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup blueberries (fresh or frozen)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. Mix the softened cream cheese and powdered sugar until smooth. Fold in the blueberries gently.
  2. Cut thick slices of bread and create a pocket in each slice.
  3. Whisk together eggs, milk, vanilla extract, and cinnamon in another bowl.
  4. Heat a skillet over medium heat and add a knob of butter.
  5. Dip each stuffed slice of bread into the egg mixture, coating well.
  6. Cook in the skillet until golden brown on both sides, about 3-4 minutes per side.
  7. Serve warm with maple syrup drizzled over the top.
