Delightful fusion of French macarons and Italian tiramisu with airy shells and a rich creamy filling.

Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coffee extract
  • 1/4 cup mascarpone cheese
  • 1/4 cup heavy cream
  • Cocoa powder, for dusting
  • Espresso or strong coffee, for soaking

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, mix almond flour and powdered sugar together.
  3. Whisk egg whites until soft peaks form, then gradually add sugar.
  4. Carefully fold the almond flour mixture into the egg whites.
  5. Add vanilla and coffee extract, and mix until well combined.
  6. Transfer the mixture to a piping bag and pipe small circles onto the prepared sheets.
  7. Let them sit for about 30 minutes to form a skin.
  8. Bake for 15-20 minutes, then let cool.
  9. Whip mascarpone cheese and heavy cream together until thick for the filling.
  10. Assemble the macarons by sandwiching the whipped filling between two shells.
  11. Let them sit for a few hours to develop flavors before serving.

Notes

Aging egg whites and sifting ingredients are key for perfect macarons.
