Delicious and healthy Thai Turkey Lettuce Wraps filled with flavorful turkey and fresh vegetables, perfect for a light meal or appetizer.

  • 1 lb Ground turkey
  • 8 leaves Romaine lettuce
  • 1/4 cup Peanut sauce
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 3 each Green onions, chopped
  • 1 cup Carrots, shredded
  • 2 tbsp Soy sauce
  • 1 tbsp Lime juice

Instructions

  1. In a large skillet over medium heat, add the ground turkey. Cook, breaking it apart with a spatula, until it’s no longer pink, about 5-7 minutes.
  2. Stir in the minced garlic and ginger. Sauté for another 2 minutes until fragrant.
  3. Add the shredded carrots, chopped green onions, soy sauce, and lime juice into the skillet. Stir everything together for 2-3 minutes.
  4. Once the filling is ready, take the skillet off the heat and let it cool slightly.
  5. On a clean surface, lay out the romaine lettuce leaves. Scoop a generous amount of turkey filling into each leaf.
  6. Carefully fold the lettuce over the filling and serve immediately.

Notes

For extra crunch, add chopped water chestnuts or bell peppers to your turkey filling. Substitute ground turkey with crumbled tofu or tempeh for a vegetarian option.
