Delicious and nourishing muffins made with ripe bananas and packed with protein, perfect for breakfast or a post-workout snack.

  • 3 ripe bananas
  • 1 cup protein powder
  • 1 cup oats
  • 2 eggs
  • 1/2 cup Greek yogurt
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing it.
  2. Mash the bananas in a mixing bowl until smooth.
  3. Combine the eggs, Greek yogurt, and vanilla extract with the mashed bananas.
  4. Whisk together the protein powder, oats, baking powder, cinnamon, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the muffin tin for a few minutes before transferring to a wire rack.

Notes

Ensure your bananas are very ripe for extra sweetness. Feel free to customize with different add-ins like berries or spices.
