  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, and cinnamon.
  3. In another bowl, cream the softened butter until smooth, then beat in the eggs and vanilla extract.
  4. Gradually mix in the dry ingredients alternately with buttermilk until well combined.
  5. Fold in the chopped pecans gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
