Delightful bars made with rolled oats and fresh strawberries, perfect for breakfast or dessert.

  • 2 cups rolled oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups strawberries, sliced
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix together oats, flour, brown sugar, baking powder, and salt. Stir in melted butter until well combined.
  3. Press half of the oat mixture into the bottom of the prepared baking dish.
  4. In another bowl, toss sliced strawberries with sugar, cornstarch, and lemon juice. Spread this mixture evenly over the oat base.
  5. Crumble the remaining oat mixture over the strawberries.
  6. Bake for 30-35 minutes, or until the top is golden brown.
  7. Let cool completely before slicing into squares.

Notes

Serve with whipped cream or vanilla ice cream. Can be stored in an airtight container for up to 3 days at room temperature or refrigerated for up to a week.
