Deliciously moist muffins filled with fresh strawberries and a creamy surprise of cream cheese, perfect for breakfast or a snack.

  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt together.
  3. Cream the cream cheese and butter until smooth, then add the egg and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients, mixing just until combined; then fold in the chopped strawberries.
  5. Fill the muffin cups evenly, filling each about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the muffins in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added sweetness, consider increasing the sugar or adding a glaze on top after baking.
