  • 6 ears of fresh corn on the cob, husked
  • 2 tablespoons melted butter
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon lime juice
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste
  • 1 lime cut into wedges

Instructions

  1. Prep the corn by husking it and removing any silk strands.
  2. Brush each ear lightly with melted butter.
  3. Preheat your grill to medium-high heat.
  4. Place the corn directly on the grill and cook for about 10-12 minutes, turning occasionally.
  5. Combine mayonnaise, sour cream, Cajun seasoning, lime juice, smoked paprika, salt, and pepper in a bowl.
  6. Stir until well blended and creamy.
  7. Grate the Parmesan cheese and set it aside.
  8. Remove the corn from the grill and coat each ear with the creamy mixture.
  9. Sprinkle with grated cheese and fresh parsley before serving with lime wedges.
