  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/4 cup additional honey for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a mini muffin tin.
  2. Combine the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, eggs, melted butter, and honey in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each muffin tin cup about 3/4 full with the batter.
  6. Bake for about 15-20 minutes until golden brown.
  7. Allow the poppers to cool slightly before removing from the tin.
  8. Drizzle with additional honey before serving.
