  • 4 chicken breasts
  • 8 oz creamed spinach
  • 6 slices turkey bacon
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook turkey bacon until crispy, then set aside.
  3. Sauté sliced mushrooms in the bacon drippings with olive oil until soft, about 4-5 minutes.
  4. Season chicken breasts with garlic powder, salt, and pepper, then brown in the skillet for 3-4 minutes on each side.
  5. Transfer the browned chicken to a baking dish. Smother with creamed spinach, top with sautéed mushrooms and crumbled turkey bacon.
  6. Optionally sprinkle shredded cheese on top.
  7. Bake in the preheated oven for 25-30 minutes until chicken is fully cooked.
  8. Garnish with fresh parsley and serve hot.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat with a splash of broth or cream.
