Tender, slow-cooked beef in warm sub rolls topped with gooey Provolone cheese, dipped in rich broth.

  • 34 lb chuck roast
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)
  • 2 tbsp butter
  • 1 sliced onion
  • 2 tbsp minced garlic
  • 2 tbsp Worcestershire sauce
  • 12 oz beef broth (plus additional for mixing)
  • 1 package Au Jus mix
  • 1½ cups beef broth
  • 6 sub rolls
  • Provolone cheese (for topping)

Instructions

  1. Start by seasoning your chuck roast generously with salt, pepper, and garlic powder.
  2. Melt 2 tablespoons of butter in a skillet over medium-high heat.
  3. Add the seasoned roast and sear on all sides until browned, about 3-4 minutes per side.
  4. In the same skillet, toss in the sliced onion and minced garlic; sauté for about 2-3 minutes.
  5. Combine 12 oz of beef broth with the Au Jus mix in a bowl.
  6. Transfer the seared chuck roast to your slow cooker and pour the sautéed onions, garlic, and beef broth mixture over the top.
  7. Cover your slow cooker and set it on low for 8 hours.
  8. Once the cooking time is up, carefully remove the roast and shred it into bite-sized pieces.
  9. Lightly toast the sub rolls in the oven for a few minutes.
  10. Load each toasted sub roll with the shredded beef, and top generously with Provolone cheese.
  11. Serve the sandwiches hot with a side of the flavorful beef broth for dipping.

Notes

For a deeper flavor, let the roast sear longer. Serve with horseradish for an extra kick. Optionally, add bell peppers or mushrooms for a veggie version.
