A comforting and creamy dish with tender chicken and rich tomato basil sauce, perfect for chilly days.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prepare the Slow Cooker Base: In a slow cooker, add the olive oil and minced garlic. Place the chicken breasts on top of the garlic.
  2. Layer in the Main Players: Pour in the diced tomatoes (with juice), chicken broth, heavy cream, dried basil, Italian seasoning, salt, and pepper.
  3. Let it Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Shred the Chicken: Before serving, shred the chicken in the sauce using two forks, incorporating every bit of flavor.
  5. Serve with Style: Serve over pasta or rice, garnished with fresh basil for that final touch of freshness.

Notes

For a thicker sauce, mix in cornstarch dissolved in water during the last hour of cooking. Feel free to customize herbs used.
