A vibrant and comforting dish featuring tender shrimp, creamy avocado, and fresh vegetables drizzled with spicy mayo.

Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup shredded carrots
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 2 tablespoons mayonnaise
  • 1 teaspoon sriracha (or more to taste)
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water and bring to a boil. Once boiling, reduce to a simmer, cover, and cook for about 15 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp are pink and cooked through.
  3. In a small bowl, mix together the mayonnaise and sriracha to create the spicy mayo.
  4. To assemble the rice bowls, divide the cooked jasmine rice among serving bowls. Top with the sautéed shrimp, sliced avocado, cucumber pieces, shredded carrots, and chopped green onions. Drizzle with soy sauce and generously add spicy mayo on top. Serve immediately.

Notes

Avoid overcooking the shrimp for the best texture. Feel free to customize the spice level and add your favorite vegetables.
