A simple, flavorful weeknight dinner featuring roasted broccoli, cheese tortellini, and savory chicken sausage, all baked to perfection.

Ingredients

  • 1 1/2 lbs fresh broccoli, cut into florets
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: red chili flakes for a kick
  • 11 oz chicken sausage, sliced
  • 16 oz frozen cheese tortellini
  • 8 oz grated parmesan cheese
  • 6 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss together the broccoli, garlic, olive oil, salt, pepper, and red chili flakes.
  3. Spread the broccoli mixture evenly on a sheet pan and layer in the sliced chicken sausage.
  4. Cook the frozen tortellini according to package instructions, then drain and add to the pan.
  5. Sprinkle grated parmesan cheese over the mixture in the pan.
  6. Bake for 20-25 minutes or until the cheese is melted and the veggies are golden.
  7. Let cool for a few minutes before serving.

Notes

Prep ahead by chopping the broccoli and garlic the night before. Substitute chicken sausage with turkey or any sausage of your choice.
