Delicious and hearty egg biscuits perfect for breakfast or any time of day, packed with cheese, proteins, and greens.

Ingredients

  • 6 large eggs
  • 1 cup shredded cheese
  • 1 cup cooked sausage or bacon, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs and milk until well combined.
  3. Fold in the shredded cheese, crumbled sausage or bacon, chopped spinach, salt, pepper, garlic powder, and onion powder.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake for 20-25 minutes, or until the egg is set and slightly golden on top.
  6. Cool slightly before removing the biscuits from the tin.
  7. Let them cool completely on a wire rack if storing.
  8. Store in an airtight container in the fridge for up to a week, or freeze for later use.

Notes

For extra flavor, consider adding herbs like chives or parsley. Mini-sized biscuits can be made by reducing baking time.
