A delightful dish featuring chicken breasts stuffed with a creamy mixture of mushrooms, spinach, and cheese, perfect for any occasion.

  • 4 chicken breasts
  • 8 oz mushrooms, chopped
  • 1 cup spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté garlic in olive oil until fragrant, about 1-2 minutes.
  3. Cook chopped mushrooms until soft, about 5 minutes.
  4. Add spinach and cook until wilted, another 2-3 minutes.
  5. Combine cream cheese, Parmesan, thyme, salt, and pepper with the mushroom-spinach mixture.
  6. Stuff each chicken breast with the mushroom mixture.
  7. Place the stuffed chicken breasts in a greased baking dish and drizzle with olive oil.
  8. Bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
  9. Let the chicken rest before serving.
