Ingredients

  • 2 eggs
  • 1/2 avocado, sliced
  • 1 cup spinach
  • 1/4 cup diced tomatoes
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Sauté the spinach in the skillet until wilted.
  3. Combine the cooked lentils and diced tomatoes in a separate bowl, seasoning with salt and pepper.
  4. Cook the eggs to your liking in another skillet.
  5. Assemble your bowl by layering lentils, sautéed spinach, avocado, and eggs.

Notes
