A nutritious twist on the classic fried rice, this dish is loaded with protein and colorful veggies, perfect for a comforting family meal.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes.
  3. Push the chicken to one side of the pan and pour in the beaten eggs, scrambling them until fully cooked.
  4. Add the garlic and mixed vegetables to the pan, stirring everything together and cooking for an additional 3-4 minutes.
  5. Stir in the cooked rice and soy sauce, mixing until everything is combined and heated through.
  6. Season with salt and pepper to taste, and garnish with sliced green onions before serving.

Notes

For best texture, use day-old rice. Customize veggies with whatever you have on hand.
