Rich and nutty Pecan Pie Cookies that capture the essence of traditional pecan pie in a portable cookie form.

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. Whisk together flour, baking soda, and salt in another bowl.
  5. Gradually combine the dry mixture into the wet ingredients, mixing until just combined.
  6. Fold in the chopped pecans.
  7. Drop spoonfuls of dough onto a lined baking sheet, spacing them apart.
  8. Bake for 10-12 minutes until edges are golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added flavor, toast pecans before mixing. Can substitute the egg for a flax egg for vegan option.
