Deliciously moist muffins that fuse the flavors of pecan pie with brown sugar, perfect for breakfast or as a sweet treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup pecan pie filling (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the melted butter, brown sugar, and granulated sugar until well combined.
  3. Add the eggs and vanilla extract to the sugar mixture, and whisk until smooth and creamy.
  4. Combine the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped pecans (and pecan pie filling if using).
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
