Delightful bite-sized pancake poppers that are fluffy, warm, and perfect for breakfast or a sweet snack.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips or berries (optional)

Instructions

  1. Whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt in a bowl until well combined.
  2. In another bowl, mix the buttermilk, egg, and melted butter until fully blended.
  3. Gently fold the wet mixture into the dry ingredients until just mixed, avoiding overmixing.
  4. Heat oil in a fryer or deep pot to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil, frying for 2-3 minutes until golden brown and floating.
  6. Using a slotted spoon, remove the poppers and let them drain on a cooling rack.
  7. Serve warm, dusted with powdered sugar or drizzled with syrup.

Notes

For perfectly golden poppers, ensure your oil is hot enough before frying. These can also be baked in a greased muffin tin at 375°F (190°C) for 15-20 minutes.
