A comforting and creamy pasta dish infused with bold Cajun flavors, perfect for busy weeknights.

  • 14 ounces smoked sausage or andouille, sliced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup crushed tomatoes
  • 8 ounces rotini pasta
  • 1 cup shredded Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add smoked sausage and sauté until browned and crispy.
  3. Stir in the diced onion, red bell pepper, and minced garlic; cook until softened.
  4. Add Cajun seasoning, paprika, black pepper, and salt; stir to combine.
  5. Pour in chicken broth, heavy cream, and crushed tomatoes; stir well.
  6. Add rotini pasta, pressing it into the liquid.
  7. Increase heat to bring to a gentle boil, then reduce heat, cover, and simmer for 12-15 minutes.
  8. Once pasta is tender, stir in Parmesan cheese.
  9. Garnish with fresh parsley and serve hot.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk. You can also swap sausage for grilled chicken or shrimp for variations.
