A warm and comforting chicken rice soup that wraps you in coziness, reminiscent of childhood memories in the kitchen.

  • 1 lb boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 1 cup white rice, uncooked
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes until the onions are translucent and the vegetables have softened.
  3. Stir in the minced garlic, dried thyme, and dried parsley. Cook for an additional minute, stirring constantly to release the fragrant oils.
  4. Pour in the chicken broth and toss in the bay leaf. Bring the mixture to a gentle boil, allowing all the flavors to meld.
  5. Add the chicken breasts. Reduce the heat to a simmer and cook for about 20 minutes, or until the chicken is no longer pink in the center.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the pot, ensuring it mixes well with the broth.
  7. Add the uncooked white rice to the pot and simmer for about 15 minutes, or until the rice is tender and has absorbed some of the delicious broth.
  8. Discard the bay leaf and season the soup with salt and pepper to taste.
  9. Ladle the soup into bowls and serve hot, savoring each comforting bite.

Notes

This soup pairs well with homemade bread or a fresh green salad. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
