Deliciously moist banana bread muffins made with ripe bananas, perfect for breakfast or snacks.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix your mashed bananas with the melted butter.
  3. Stir in baking soda and salt.
  4. Add in sugar, beaten egg, and vanilla extract; mix well.
  5. Incorporate the all-purpose flour until just combined.
  6. Pour the batter into a greased muffin tin, filling each cup two-thirds full.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Let cool before transferring muffins to a wire rack.
