A quick and comforting creamy white bean soup with a subtle punch of Dijon mustard, perfect for chilly days.

Ingredients

  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 tbsp Dijon mustard
  • 1 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream
  • 2 strips turkey bacon, cooked and crumbled (optional)
  • Salt to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add the white beans, vegetable broth, Dijon mustard, thyme, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  6. Use an immersion blender to blend the soup until smooth.
  7. Stir in the heavy cream and heat for another 2 minutes.
  8. Season with salt to taste and serve hot, topped with crumbled turkey bacon if desired.

Notes

This soup can be stored in an airtight container for up to 4 days.
